If you want to try a soft, fluffy bread in your bread machine using regular flour and yeast, you HAVE to try this Orange Cranberry Pecan Bread!!

This year, Santa gave me a bread machine, and I am in love!! The only thing that surprised me was that almost all recipes recommend bread flour and bread machine yeast, which are difficult to come by where I live. The bread flour is either sold at health food stores (super expensive), at Costco (50lb bag, yikes!) or online (this is the one I found), and the bread machine yeast is only available online (this is the one I found). Some recipes said you can use all-purpose flour and instant yeast, but they came out too dense for my taste. Still tasty, but not fluffy like I’m used to.

I don’t know if it’s because of the orange juice, the butter, or what, but this is the softest, fluffiest bread I have made so far with regular flour and yeast. And it’s so tasty!!! It’s not overly sweet, and the pecans give it a nice crunch.
Sometimes I use dried cranberries, and sometimes dried mixed berries. Also, sometimes I use chopped pecans and sometimes sliced almonds. They are all sooo good!! My favorite way to enjoy it is simply toasted with a bit of butter, although this makes the BEST french toast ever!

Orange Cranberry Pecan Bread (Bread Machine Recipe)

- 1 Bread machine
Ingredients
- 3/4 cup water
- 1/4 cup orange juice
- 1 1/2 tsp salt
- 1/4 cup sugar
- 2 tbsp nonfat dry milk
- 2 tbsp butter cut in small pieces
- 3 1/2 cups all-purpose flour
- 1 1/2 tsp orange zest
- 2 tsp instant yeast
- 1/3 cup dried cranberries
- 1/3 cup chopped pecans
Instructions
- Microwave the water in the microwave about 30 seconds. Do not let it boil. Also, let the orange juice come to room temperature, microwaving a few seconds if necessary.
- Pour the water in the bread machine and sprinkle yeast on top of it. Let it sit between 6-10 minutes to activate. It should foam.
- Add the orange juice, salt, sugar, dry milk, butter, orange zest, and flour.
- Set the machine to the “sweet” cycle, 1.5 lb, light crust. Begin cycle as per manufacturer’s instructions.
- Mix dried cranberries and chopped pecans in a small bowl or resealable bag with 1 tsp flour and mix to coat. Add them to the machine at the “add ingredient” signal.
